Vegetarian Asian Chicken Recipes?

I'm not trying to become a vegetarian, but I don't like the texture of asian chicken. Is there a recipe something like sweet and sour chicken, cashew chicken, sesame chicken, general chicken, or bourbon chicken that has the flavor and savoriness of those dishes without the texture (or weight) of them?
